Sweet Potato & Spinach Bake

Ingredients

To make this Sweet Potato & Spinach Bake, you will need:

  • 1 medium sweet potato, grated
  • 4 tablespoons chickpea flour (also known as gram flour or besan)
  • 100g crumbled feta cheese
  • 2 eggs
  • ½ cup fresh spinach, chopped
  • Salt and black pepper, to taste

Optional Additions for Extra Flavor

  • 1 teaspoon garlic powder – Enhances the savory flavor
  • ½ teaspoon smoked paprika – Adds a subtle smoky depth
  • ¼ teaspoon chili flakes – For a mild kick of heat
  • Fresh herbs like parsley or thyme for garnish

Preheat the Oven

Preheat your oven to 180°C (350°F). If using a fan oven, set it to 160°C (320°F). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Ingredients

  • Grate the sweet potato using a coarse grater. There is no need to peel it if the skin is clean.
  • Chop the spinach finely to ensure it blends well into the mixture.
  • In a large bowl, whisk the eggs until well combined.

Mix Everything Together

  • Add the grated sweet potato, chickpea flour, crumbled feta cheese, and chopped spinach to the bowl with the eggs.
  • Season with salt and black pepper, along with any optional spices.
  • Stir everything together until the mixture is evenly combined.

Shape & Bake

  • Spread the mixture evenly on the prepared baking sheet, pressing it down slightly. It can be shaped into a rectangle or left more rustic.
  • Bake for 20-25 minutes, or until golden brown and firm to the touch.

 Cool & Serve

  • Let it cool for a few minutes before slicing.
  • Serve warm as a savory breakfast, a light lunch, or a side dish with a complementary dip.
