Ingredients
rice flour 1 cup
fine rava/ suji 1/2 cup
curd 1/2 cup
water 1 1/2 cups
salt to taste
Coriander leaves / curry leaves chopped 1 tsp ( optional )
cumin seeds 1 tsp ( optional )
oil to cook
Method
Mix rice flour, rava, curd well adding salt, then slowly add water, whisking well, so lumps are formed. You may add cumin seeds, curry/ coriander leaves finely chopped, if preferred some grated carrot, green chilies.
Let the batter rest for 15 minutes
Mix the batter well again before making dosa. If the consistency is slightly thick, you may add little water, as some suji takes more water.
Once the tawa is hot, smear little oil, spread dosa batter thin all around, cook on medium flame till brown down, if you prefer,you may turn and cook slightly adding little oil. How crisp you prefer is your choice.
Serve dosa hot with sambar, chutney, milagai podi/ gun powder as some call.
