Left-over rice uttapam

 Ingredients

left over rice 1 cup +

suji 1 cup

curd 1 cup 

water  1/2 - 1 cup is used to grind the rice, suji and curd

salt to taste, mix well, rest for 5-10 minutes

blend with water, remove add

Eno 1 tsp , mix well

smear oil on a hot tawa, spread the batter, put little oil all around, once bottom is brown, flip over and cook for another 1-2 minutes, serve hot either with the tomato-onion chutney or coconut chutney.

oil 1 tbsp 

urad dal 1 tbsp

chana dal  1 tbsp

green chilies as per taste

onion 1 medium

tomatoes 2-3

 garlic 3-4 optional

salt to taste 

fry the dals, add garlic, onion and green chilies, once onion turns transparent, add the chopped tomatoes, mix well, cover and cook till tomatoes are soft, once cool, grind to a smooth paste

hing little

curry leaves chopped 1 tsp

pour the seasoning over the chutney, mix well , serve with uttapam

Avil-Peanuts Ladoo

Ingredients and Preparations

avil  2 cups roast till crisp

peanuts 1 cup roast well, cool, remove the skin

jaggery 250 gm

water 1/2 cup

once jaggery melts add

desiccated coconut 1 cup

pdr the roasted avil

pdr the peanuts well

add to the jaggery mixture, mix well adding

ghee 1 tsp some chopped nuts

once cool, roll into small balls

Home-made Nutty Ice-cream

 Ingredients and Preparations

full fat milk 1/2 litter boil it, add

almonds 10

cashews 10

 rusk biscuit 5

cardamom 3 

once it all boils, switch off the gas

 add makhana 10-12

sugar 1/2 cup

milk pdr 2 tbsp

mix all well

once cool, add the mixture in a blender jar along with 1/4 cup cream, blend well

pour the mixture in an airtight container, sprinkle some chopped nuts on top

freeze it for 7-8 hours till well set, your home-made healthy ice-cream is ready.

Masala Aloo Puri

 Ingredients and Preparations

1 cup water

1 tsp oil

suji 1 cup

mix all well, let it rest for 10 minutes

add finely chopped coriander leaves 2 tbsp

whole wheat flour 1 cup

turmeric pdr 1/2 tsp

red chili pdr 1 tsp

jeera 1/2 tsp

ajwain 1/2 tsp 

hing little

ginger -green chili-garlic paste 1 tbsp

boiled potato 1 big, grate 

now all the above ingredients well  and knead to a soft dough

smear little oil on top, so it won't stick to your hands

take small balls, roll into thin puris, fry them in hot oil

drain well, serve hot with tea, if need be along with some green chutney/ pickle.

Sabudana rasmalai

 Ingredients and Preparations

sabudana 1 bowl, wash and soak till it is soft, drain well

milk pdr 2 tbsp

pdr sugar 2-3 tbsp

blend all the above ingredients together without adding water, make small balls or flatten them if desired

In a pan, boil 1 liter milk

add sugar 2 cup

cardamom pdr 1/2 tsp 

mix all well, till the sugar melts and the milk starts boiling, reduce heat

add the prepared balls carefully one by one

let them cook  simmer for 8 minutes cook covered

remove from gas, sprinkle some chopped pistachios, cool and serve.
