Instant Dhokla in 30 minutes

Prepare the batter
In a large mixing bowl, combine 1 cup of chickpea flour (besan), 1/4 teaspoon of turmeric, 1/2 teaspoon of baking soda, 1/2 teaspoon of ginger-green chili paste, and salt to taste. Gradually add water, stirring constantly, until the batter achieves a smooth, pourable consistency, free of lumps.
 
Add yogurt & lemon
To enhance the fluffiness and flavor of the batter, stir in 1/4 cup of thick yogurt and 1 tablespoon of fresh lemon juice. These ingredients help create a tangy and soft texture, which is key for making delicious dhokla.
 
Steam the batter
Grease a steaming tray or a shallow plate with a little oil to prevent sticking. Pour the prepared batter into the tray, spreading it evenly. Bring water to a boil in a steamer, then place the tray inside. Cover and steam the batter for 15-20 minutes or until a toothpick inserted comes out clean.
 
Temper the dhokla
In a small pan, heat 1 tablespoon of oil. Once hot, add mustard seeds, a few curry leaves, and green chilies. Allow them to splutter for a minute. Pour this flavorful tempering over the steamed dhokla, letting the oil infuse the dish with its spices.
 
Cut into pieces
After the dhokla has cooled down a little, use a knife to cut it into small square or diamond-shaped pieces. This ensures easy serving and enhances the dish’s visual appeal.
 
Serve & enjoy
Garnish the freshly cut dhokla with finely chopped coriander leaves. Serve it with your favorite chutneys, such as mint or tamarind, for a delightful snack or meal. Enjoy your soft and fluffy instant dhokla in just 30 minutes!
