Ingredients
For the pasta:
- 200 gm all purpose flour
- 2 large eggs
- 30 gm cocoa pdr
- 1 tbsp sugar
- A pinch of salt
For the sauce:
- 100 gm dark chocolate
- 100 ml heavy cream
- 1 tbsp butter
For the berries:
- fresh berries
- powdered sugar
- fresh mint leaves
Method
Make the chocolate pasta:
- Mix the flour, cocoa powder, sugar, and salt in a bowl. – Create a well in the centre and crack the eggs into it.
- Gently whisk the eggs and then gradually incorporate the dry ingredients until it forms a dough.
- Knead the dough for 5–10 minutes until smooth. If it’s too dry, add a little water; if too sticky, add more flour.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
- Roll out the dough and cut it into your desired pasta shape (like fettuccine or pappardelle)
Cook the Pasta:
- Boil a large pot of salted water and cook the chocolate pasta for 3–4 minutes or until al dente.
- Drain and set aside, reserving a bit of the pasta water for the sauce.
Prepare the Chocolate Sauce:
- In a small saucepan, melt the dark chocolate over medium-low heat.
- Add the cream (or milk) and butter, stirring until smooth and creamy.
- If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
Serve:
- Plate the cooked chocolate pasta.
- Pour the chocolate sauce over the pasta.
- Top with fresh mixed berries and a dusting of powdered sugar if desired.
- Garnish with fresh mint leaves for a pop of colour and freshness.
