Chocolate Pasta with Berries

   

Ingredients

For the pasta:

  • 200 gm all purpose flour
  • 2 large eggs
  • 30 gm cocoa pdr
  • 1 tbsp sugar
  • A pinch of salt

For the sauce:

  • 100 gm dark chocolate
  • 100 ml heavy cream
  • 1 tbsp butter

For the berries:

  • fresh berries
  • powdered sugar
  • fresh mint leaves

Method

Make the chocolate pasta:

  1. Mix the flour, cocoa powder, sugar, and salt in a bowl. – Create a well in the centre and crack the eggs into it.
  2. Gently whisk the eggs and then gradually incorporate the dry ingredients until it forms a dough.
  3. Knead the dough for 5–10 minutes until smooth. If it’s too dry, add a little water; if too sticky, add more flour.
  4. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  5. Roll out the dough and cut it into your desired pasta shape (like fettuccine or pappardelle)

Cook the Pasta:

  1. Boil a large pot of salted water and cook the chocolate pasta for 3–4 minutes or until al dente.
  2. Drain and set aside, reserving a bit of the pasta water for the sauce.

Prepare the Chocolate Sauce:

  1. In a small saucepan, melt the dark chocolate over medium-low heat.
  2. Add the cream (or milk) and butter, stirring until smooth and creamy.
  3. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Serve:

  1. Plate the cooked chocolate pasta.
  2. Pour the chocolate sauce over the pasta.
  3. Top with fresh mixed berries and a dusting of powdered sugar if desired.
  4. Garnish with fresh mint leaves for a pop of colour and freshness.
