PLUM JAM



INGREDIENTS
Plum ¾- 1 kg washed, stalks removed
Grated rind and juice of 4 oranges
Water 300 ml
Sugar ¾- 1 kg

METHOD
Cut the plums in half, remove the stone, if the plums are big, you may quarter them.
Put the cut plums in a big heavy pan along with orange rind, juice and water, bring to a boil and simmer for 15 minutes.
Add sugar and heat gently stirring till the sugar is dissolved.
Bring to a boil on high heat, remove the scum, boil for another 2-3 minutes on low flame, once you put the jam on a plate and tilt it, it should not run, then remove, cool, pour into sterilized bottles and store.
