INGREDIENTS
rice flour 1/2 cup
wheat flour / atta 1/2 cup
rava / semolina 1/2 cup
maida / all purpose flour 1/2 cup
salt to taste
green chilies finely chopped and chili paste to taste
coriander leaves finely chopped 1 tbsp
curry leaves finely chopped 1 tbsp
hing 1/4 tsp
onion finely chopped 1 big ( optional) OR
finely chopped or grated cabbage 1/2 cup
hot oil 2 tbsp
water to knead
oil to fry
METHOD
all the flours and semolina are in equal quantities, those who need less can take less of all but in equal quantities, then add salt, green chilies, coriander leaves, curry leaves, hing, onion or cabbage, mix well, then add hot oil, mix well, be careful not to mix with hand, if you can't stand the heat from the oil, use a spoon, then add water little by little to make a soft dough, it should be like the parantha or what we make for doing thatai or cheedai ( South Indians will know the last 2 snacks mentioned). You may either make vada by making your hands wet, or lightly applying oil, or you can make thin vada in a plastic sheet, then carefully remove and fry in hot oil till golden on both sides, keep the gas on medium flame after you out the vadas, drain and serve hot with coconut chutney.
