ORANGE PEEL PACHADI

INGREDIENTS
orange peel of 1 orange- remove the white thread like parts and finely chop
ginger finely chopped 1 tbsp
green chilies finely chopped 1 tbsp or to taste
curry leaves finely chopped 1 tsp
oil 1 tbsp
mustard seeds 1/2 tsp
hing little
tamarind paste  1 tbsp( mix with 1 cup water) or tamarind juice 1/2 cup thick + 1/2 cup water
salt to taste
haldi 1/4 tsp
coriander leaves finely chopped 1 tsp
roasted til 2 tbsp powdered
gur/ sugar 1 tbsp ( optional)

METHOD
in a pan, heat oil, add mustard seeds, once it crackles, add ginger, chili, curry leaves fry for a minute
add hing, orange peel, haldi fry for a minute, add tamarind juice, add 1/2 cup water, salt, let it simmer for 5 minutes, add gur if desired, remove, add til powder, coriander leaves.
serve with curd rice, idli, dosai, chilas, bread, you can store it in the fridge for about 3 days if it lasts till then !
