Ingredients
onion 4 small or 2 big finely chopped
tomatoes 4 medium size finely chopped
carrots 4 big, finely chopped
garlic 5 cloves finely chopped ( optional)
salt to taste
chilli pdr. 1 tsp or to taste
vinegar 2 tbsp ( I used normal white vinegar)
sugar 2 tsp ( optional)
oil 1 tbsp
cumin 1 tsp
hing/asafoetida little
turmeric pdr. 1/2 tsp
Method
I did it microwave, but the same method can be followed & done on gas.
Heat oil, add cumin, once it crackles, add garlic, hing, onion, wee bit of salt, mix well, micro high for 3 minutes, covered,
Add finely chopped tomatoes, turmeric pdr., mix well, micro high for 3 minutes covered.
Add carrots, chilli pdr, salt to taste, mix well, micro high covered for 3 minutes.
Mix well, add vinegar, micro high again for 3-4 minutes, depending on how crunchy or soft you want your carrots to be.
Check for spices, you may add sugar, mix well & keep for a minute if you want to sweet and spicy taste.
Cool & store it in clean dry bottle, in the fridge.
This goes well with toasted bread, roti, I spread it over cracker biscuit, so the options are yours to try !.

carrots are rich in beta-carotene which is good for the eyes. Garlic has many properties, including anti-cancer, anti-inflammatory, turmeric has anti-fungal, anti-bacterial properties.
