Veg Stuffed Dosa

 Ingredients and Prep

large potato 1 boiled/ 2 small potatoes

rice 1/2 cup washed and soaked for 1 hour

green chilies 1-2 as per taste

ginger 1" chopped

jeera 1/2 tsp

salt to taste

once potato is cooled, peel , roughly chop, grind with rice to a thick paste along with green chili, ginger, jeera and hing, add salt mix well, keep it aside

in a pan, heat oil 1 tbsp

add jeera 1/2 tsp

saunf 1/2 tsp

hing 1/4 tsp, add 

onion 1 big sliced , garlic 2-3 pearls , green chilies as per taste,fry for 2-3 minutes, add

tomato 2 chopped, fry adding little salt, 

add capsicum 2 tbsp, fry for 2-3 minutes

add a cup of chopped spinach leaves, fry till leaves are soft

add boiled green peas, chaat masala, salt to taste, mix well 

you may add carrots finely chopped too

Heat a pan, add 1 tbsp oil, add 1/2 tsp mustard seeds , once it splutters and 1/2 tsp til  fry for a minute

add the batter, so spread well all around aft 3 minutes on medium flame, spread the prepared veges all around, spread the batter to cover it, cook on medium flame for another 3 minutes, flip over once the bottom is cooked

after flipping cook for another 3-4 minutes, serve hot with chutney of your choice.
