Here's what a chef said-
1. Cook in mustard oil
2. No extra masalas
3. Only garlic and chili
4. Keep it simple
Ingredients:
Amaranth leaves (cholai) 500gm - washed and cleaned the weight
would reduce as you'll remove the hard stems.
Mustard oil 2tbsp
Garlic chopped 1tbsp

Green chili chopped 2
Potatoes peeled and chopped 2
Onion 1/2 (optional)
turmeric powder 1/2tsp
Salt to taste
Sugar 1/2tsp
Method:
1. Wash and chop the amaranth leaves.
2. In a kadhai add the oil and the garlic. Let it become light brown
and fragrant. Add the green chili and then the potatoes.
3. Let the potatoes fry and cook for 10 mins till 70-80% done.
4. Add the leaves and toss till it all fits comfortably. Put the lid and let
it cook for 5mins as it leaves a lot of water.
5. Remove the lid, add haldi and salt. And let it cook for another 2
mins.
6. Sprinkle a dash of sugar and serve hot with dal chawal.
