Ingredients
For covering
Atta 2 cups,
add turmeric pdr ¼ tsp,
salt a pinch
add water make a dough softer than for roti, sticky, add 1 tbsp oil, mix well, cover and rest for 1 ½ hours
For stuffing
Jaggery 1 cup
add 2 tbsp water,
cook till jaggery melts
chana dal 1 cup, wash well, cook with 2-3 cups water in a pressure cooker for 3 whistles after soaking the dal for 3 hours.
Important tip- whenever you pressure cook chana dal, the water comes out, to prevent that add little oil and keep a big serving spoon which can fit inside the cooker. This will prevent the mess of water splashing all over.
Strain water completely from the cooked dal, mash the hot dal well
Add the jaggery syrup, cook till it all comes together,
add ½ tsp cardamom pdr,
nutmeg pdr little
mix well
add 1 tsp ghee mix well
To make poli, take small amount of dough after kneading again well. Take equal amount of dal mixture, make a ball of the stuffing.
Roll out the dough to the size of 4" diameter roughly, put the stuffing, carefully close the stuffing from all sides.
the carefully remove any excess dough, roll it out as thin as possible.
lightly grease a tawa, clean with a tissue, put the rolled out poli, cook on medium hot tawa, by turning on both sides like you'll cook a roti, once brown spots appear, apply little ghee, your poli will puff up well like a puri, you can find your poli soft in layers.
