TRICOLOURED HALWA

INGREDIENTS
carrot grated  500 gm
bottle gourd / lauki  grated  500 gm
coconut finely grated 1
khoya / mawa / thickened milk  250 g,
sugar 950 gm
milk 2 cups
cardamom pdr. 3 tsp
ghee 1 cup
cashew nuts  50 gm chopped
raisins   50 gm
salt to taste

METHOD
kindly note that carrot and lauki to be weighed after grating only

cook in 3 non-stick or heavy bottomed pans
put grated carrot, 1/2 cup milk and 1/2 of khoya  and 350 gm sugar in 1 pan, let it cook on medium heat, stirring gently from time to time till it leaves the sides of the pan.
add 2-3 tbsp of ghee, 1 tsp of cardamom pdr., little salt and the cashew nuts, mix well, spread evenly in a big greased plate.
cook coconut with 250 gm sugar and 1 cup milk,cook on medium heat ,stirring from time to time till it leaves the sides of the pan. add 2 tbsp of ghee, 1/8 tsp of salt and 1 tsp of cardamom pdr., mix well, spread evenly on the carrot halwa.
cook lauki with remaining milk ,sugar, khoya on medium flame/ when nearly ready, add 2-3 tbsp of ghee, cardamom pdr., little salt, raisins, spread over the coconut layer. roll evenly, 
once well set, cut into desired shapes and serve.
