When buying bell peppers, turn them
over and look at the bottom. If there are 3 bumps, it's a 'male'
pepper, and if you see 4 bumps, it's a 'female' pepper. The 'female'
peppers are sweeter and it's best to use them fresh. On the other hand,
the 'male' peppers are more solid, and their flavor is deeper, so
they're great to use in a wide range of cooked dishes.
