PAPAYA GUJIYA OR SOMASI



INGREDIENTS
For the covering
Maida/all purpose flour  1 ½ cups
Suji/ rava  ½ cup
Oil 4 tbsp
Salt to taste
For the filling
Raw papaya grated ½ cup
Sweet Corn blanched and crushed ½ cup
Potatoes boiled and mashed 1 cup
Salt to taste
Green chili- ginger paste 2 tsp or to taste
Amchur pdr 1 tsp
Coriander leaves chopped 2 tbsp
Garam masala pdr ½ tsp
Nuts chopped 1 tbsp
Raisins 1 tbsp chopped
 Oil for frying

METHOD
Make a tight dough with the ingredients and keep aside.
First mix salt with raw papaya, keep aside for 15 minutes, squeeze out water
Add rest of the ingredients to raw papaya, mix well.
Roll dough into small puris, put enough stuffing inside, fold into half, seal with water and with fork make design all around to seal well, do the same with the rest of the dough and the filling, keep covered.
Fry in hot oil till brown, drain and serve hot with chutney/ ketchup
