INGREDIENTS
For papaya
1 big raw papaya
Sugar 1/2 cup
Cardamom 2
Cloves 2
Cinnamon pdr 1/8 tsp
For sandesh
Paneer ½ cup ( mashed well)
Khoya ½ cup ( mashed well)
Powdered sugar ½ cup
Cardamom pdr ¼ tsp
METHOD
Peel the papaya, remove the white part and the seeds. Cut into ½” thick
pieces , either square or round. add papaya pieces, sugar, cardamom, cloves,
along with enough water to cover the papaya. Cook till papaya pieces are cooked
and soft but not over-cooked. Drain the pieces from the syrup and keep on a
plate.
Cook paneer for 2-3 minutes, stirring well. Then add khoya, cook for
another 3-4 minutes, stirring well on medium flame, till light pink. Remove,
cool and add powdered sugar along with cardamom pdr. mix well. Divide the
paneer portion, according to the number of papaya pieces you’ve cooked. Roll
the paneer pieces, slightly flatten to fit the papaya piece, garnish with
saffron and nuts on each piece.
Your papaya sandesh is ready !
