 Vegan Cookies ’n’ Cream Ice Cream    


Ingredients for Cookies ‘n’ Cream Ice Cream:  
 
Cashews - 2 cups 
 
Maple syrup - 1/4 cup 
 
Lemon juice - 1/4 cup
 
Water - 1/2 cup 
 
Vanilla Extract - 1 tsp. 
 
Salt - a pinch 
 
Chocolate chips - 2 tbsp. 
 
Chocolate cookies - 9 (crushed) 
 
 
Method of preparing the Cookies ‘n’ Cream Ice Cream: 
 
Soak the cashews overnight, and then wash them, before drying them well. 
 
In a food processor, mix all the ingredients, except for the cookies and chocolate chips, and blend until the consistency is smooth. 
 
Add the chocolate chips and cookies and blend a few times. Freeze for 4 hours before serving.
