Method
Step 1 : To make the date syrup
Add pitted dates to 1/2 a cup of boiling
water and soak until mushy then grind it into a fine paste.
Step 2 :
To the blender, add all the wet
ingredients including 1 tsp orange zest and blend it to a smooth frothy
mix and shift it to a bowl.
Step 3 :
In another, bowl add all the dry ingredients and mix well.
Step 4 :
Now, slowly add the dry ingredients to
the wet ingredients and mix well until incorporated to form a thick
batter. Do not over mix.
Step 5 :
Shift the batter to a greased and dusted
loaf pan and in a preheated oven, and bake it at 180° C for 35 minutes
or until an inserted tooth pick comes out clean.
Step 6 :
Wait till the cake cools down completely before slicing it. Serve it once cut!
