The healthy snack is reminiscent
sesame bars, with plenty of health benefits, and the sweetness of real
maple syrup. In addition, it is also gluten-free, vegan, easy to make,
crispy and nutritious.
Ingredients:
½ cup quinoa, uncooked
¾ cup pecans, chopped
¼ cup oatmeal
2 tbsp chia seeds
2 tbsp. coconut sugar (or regular sugar)
A pinch of salt
2 tbsp coconut oil
½ cup maple syrup
Directions:
1. Heat your oven to 325 f and line a baking dish with parchment paper.
2. In a large bowl, mix the quinoa, chopped pecans, oatmeal, chia seeds,
sugar, and salt.
3. Pout the maple syrup and coconut oil to a small pot and warm the
mixture up over a low-medium flame for 2-3 minutes. Mix every once in a
while until the maple and coconut oil completely come together.
4. Remove the pot from the flame and pour its contents over the dry
mixture and mix well.
5. Carefully pour the mixture into the lined pan and level It out so
that it's even.
6. Place into the oven and bake for 15 minutes, then turn the pan around
180 degrees so that it's lying sideways, to make sure the whole pan
browns evenly, and bake for another 5-10 minutes. Keep an eye on the
oven to make sure your bars don’t burn.
7. The snack is ready when it turns an even golden color, but don’t
worry if the edges are darker than the rest.
8. Let the snack cool well before breaking into pieces using a knife or your hands.
