Mini Caramel Apple Bites

Ingredients for Caramel Apple Bites:  
 
Gingersnap cookie crumbs - 2 cups 
 
Unsalted butter - 8 tbsp. (melted) 
 
Apple - 4 cups (peeled and chopped) 
 
Granulated sugar - 1/3 cup 
 
Brown sugar - 1/4 cup 
 
All-Purpose flour - 2 1/4 tbsp. 
 
Ground cinnamon - 1/2 tsp. 
 
Nutmeg - 1/4 tsp. 
 
Caramel sauce - as needed (to drizzle)
 
 
Method of preparing the Caramel Apple Bites:  
 
Preheat the oven to 350°F. 
 
Grind up the gingersnaps in a food processor. 
 
Grease 24 mini-muffin tins. 
 
Mix the butter and gingersnaps together in a bowl. 
 
Once mixed well, press into the muffin tins. 
 
Bake for 5 minutes, then allow to cool. 
 
Finely chop the apples in the food processor. 
 
Combine with 1/4 cup brown sugar, 1/3 cup sugar, 1/2 teaspoon cinnamon, 2 1/4 tablespoons flour. 
 
Cook down over medium heat. 
 
Scoop small spoonfuls into each muffin tin, top with any leftover cookie crumble, and bake for 10 minutes. 
 
Drizzle with caramel.
