Ingredients for Black Bean Soup:
Black beans - 2 cans
Vegetable broth - 1 cup (use chicken broth for a non-vegan version)
Diced tomatoes - 1 can
Method of preparing the Black Bean Soup:
Mix the ingredients in a pot and bring to a boil.
Lower the heat and let simmer for 20 minutes.
Remove from heat and blend to a smooth consistency.
Chef's Tip:
This soup can also be served cold, or used as a bean spread. To use as a spread, cut the broth and tomatoes in half.
