Normally when I've over-ripe bananas, I used to make banana bread, appam or in cake in stead of eggs. Today wanted to try something different, though I had just 2 small over-ripe bananas. I had peeled and mashed the bananas well, sprinkled some jaggery pdr and some small pieces of jaggery on it, roughly slightly less the banana quantity.
INGREDIENTS
bananas 2 small over-ripe
gur slightly less than the banana quantity (in case you don't have pdr. gur,just soak the gur you've in little water, then you'll be able to crush it with hand or spoon to get like a syrup)
nuts about 1 tbsp chopped
whole wheat flour 1/2 cup
rava/ semolina 1 heaped tbsp
ghee 3 tbsp
METHOD
Heat 1/2 tsp ghee, roast the nuts and remove
In the same pan/ kadai add 1 tbsp ghee and wheat flour, keep frying it in low flame till light brown
add rava at this time and continue frying till a nice aroma comes and the flour turns slightly darker brown.
Now add mashed banana and gur ( either syrup or what was sprinkled over banana) and keep stirring on low flame mashing the mixture well, as it all comes together add another tbsp of ghee and continue stirring, adding 1/2 of the fried nuts, reserving rest for garnishing.
Once the mixture leaves the sides of the pan / kadai, spread on a greased plate, sprinkle the reserved nuts on top, press it down.
Wait till it cools completely to cut into desired shapes.
NOTE- the quantity can be doubled.
if you don't have gur, you may try with sugar, though I've not tried, I'm sure it will come out good, in stead of making sugar syrup, just add it along with banana, as you keep cooking, it will melt, once the sugar has completely melted, then you continue cooking till it all come together and leaves the sides of the pan.
