After making fried modak/ kolakattai, I wanted to eat crisp ajwain puri, thought the dough I needed would be enough to make puris. Sadly, the dough and the filling were just perfect, all dough and filling used to make modak. So, after lunch, made some more dough and made them.
Till now forgotten to take out photo, as today was another hectic day. Shall try take tomorrow and post it.
INGREDIENTS
maida as much as need
salt & pepper pdr to taste
ghee for 1 cup all purpose flour, 1 tbsp approximately
ajwain 1/2 tsp crushed with palms
oil for frying
METHOD
add flour, ghee,mix well, add salt and pepper pdr. , crush ajwain with your palms , mix well.
add enough water to make a stiff dough like for puri
after kneading the dough well, took small marble sized balls, dusted lightly with flour, roll into thin puri, prick holes all over either with a fork or knife, so it won't puff up.
deep fry well in hot oil, till light brown on both sides, drain on kitchen towel, and store in air-tight container.
it is a nice crispy snack to have with your afternoon tea/ coffee.
NOTE- to make it healthy, you can use whole wheat flour and proceed in the same way.
