Since the time I read about this halwa, was very eager to make. I did buy roughly 1/2 kg of white pumpkin, peeled the green part, removed the seeds, religiously grated it, squeezed out the water and kept it in the freezer, as there were other delicacies to relish. Today, I said, it is high time, I try it out.
Though the grated pumpkin would have come to 1 big cup full, sadly the ultimate halwa was one small cup full ! So, just enough to taste for hubby and self ! This is for those, who have more members at home to share, then buy at least 1 kg pumpkin, so everyone gets at least 1 heaped tbsp to taste !
INGREDIENTS
white pumpkin grated 1 cup
ghee/ clarified butter 2 tsp
nuts 1 tsp
sugar little less than 1/2 cup or according to taste
kesar pdr little or saffron strands little soaked in warm milk
METHOD
peel the green part of the pumpkin, grate it in the smaller hole grater.
you can squeeze out the water and keep to cook it later
In a heavy / non-stick pan, heat 1 tsp ghee, fry nuts, remove
in the same pan, add the squeezed out pumpkin, fry well for 3-4 minutes on medium flame
add the reserved water or fresh water 1/2 cup, mix well, cover and cook the pumpkin till soft.
add the saffron pdr/ soaked saffron, sugar to taste and mash all well till the sugar is absorbed.
once it is dry, add 1 tsp ghee to get the glossy/ shiny look, add nuts, mix well, remove.
Enjoy this delicious halwa.
