Sweet lemon pickle

Ingredients

lemons  20
salt   200 gm
turmeric pdr.  1 tsp
sugar  4 cups
jaggery grated   2 cups
chilli pdr.   1-2 tsp
garam masala  pdr.  1 tbsp( optional)

Method
squeeze out juice of around 8 lemons
cut the remaining lemons and lemon skins of the squeezed lemons into quarters, put in a sterilised jar
press lemons tightly, so that the juice covers all the pieces
cover the jar and place it in the sun for 10-12 days or till lemons are tender
leave aside for 10 days until the sugar is dissolved, stirring the contents of the jar every 2nd day
add chilli pdr and garam masala if desired, mix well
if stored properly, this pickle will last for a year.
