Foxtail Millet Porridge

The richness of banana and figs is paired with the healthy and light foxtail millet. Made into a porridge, this is a heart warming breakfast and doesn't add extra pounds. 

 Ingredients

80 gm foxtail millet ( kangni Hindi OR Thinai arisi in Tamil)

250 ml milk

5 Banana slices

4 cashew nuts

2  figs, sliced

4 lotus seeds/ makhana

Handful of amaranth seeds

 

Preparations

Soak the foxtail millet in water for half an hour

Drain the water.

Add the foxtail to the milk and cook it on a medium heat for 5 minutes.

Once cooked take off heat and add figs, banana, cashew nuts, amarnath and lotus seeds.

High-Protein Healthy Pizza- No Oven, cook over gas

 Ingredients: 

5-6 Boiled Sweet Potatoes

1/2 cup Oats Powder (for binding)

Salt

1 tsp Oil

Paneer

Boiled Sweet corn

Chilli Flakes

Oregano

Kashmir Red Chilli Powder

Pizza  Sauce

Lots of Cheese


Preparations

Prepare the pizza base: Peel the boiled sweet potatoes and place them in a large bowl. Mash them thoroughly until smooth, making sure there are no large lumps.

Add the binder: Add ½ cup oats powder, salt and 1 tsp oil to the mashed sweet potatoes. Mix everything well until you have a soft, dough-like mixture that can be shaped into a pizza base.

Shape the base: Place a large piece of parchment paper or a lightly greased flat surface on your kitchen counter. Transfer the sweet potato mixture onto it and gently flatten it into a round pizza base. Keep the base neither too thin nor too thick so that it holds together while cooking.

Heat the pan: Place a non-stick or heavy-bottomed tawa/pan on the gas stove and let it heat on a low flame. Carefully transfer the prepared sweet potato base onto the pan. If needed, shape the edges gently with a spoon or spatula.

Cook the base: Cover the pan with a lid and cook the base on a low flame. Let it cook until the bottom becomes firm and lightly golden. Avoid using a high flame, as the sweet potato base can brown too quickly while remaining soft inside.

Add the toppings: Once the base has firmed up, spread a layer of pizza/pasta sauce over it. Add the paneer and boiled sweetcorn, followed by chilli flakes, oregano and a little Kashmir red chilli powder.

Add plenty of cheese: Top the pizza generously with cheese. You can add extra paneer or vegetables at this stage if you want to make the pizza even more filling and nutritious.

Cover and cook: Cover the pan again with a lid and cook on the lowest flame until the cheese melts completely and the toppings are heated through. This usually takes a few minutes, depending on the thickness of the base and the type of cheese used.

Serve: Once the cheese has melted and the pizza is cooked through, carefully remove it from the pan. Let it rest for a minute or two before slicing and serving hot.

Makhan Mishri for Janmashtami Bhog

 Ingredients

Fresh malai (milk cream) – about 2 cups

Mishri (rock sugar) – 2–3 tablespoons, or according to taste

Cold water – as required

You can also add a small amount of cardamom powder if you wish, although plain Makhan Mishri is the more traditional and simple choice for bhog.

How to Make Fresh Makhan at Home

1. Collect Fresh Malai

Start collecting the cream that forms on top of boiled and cooled milk. Store the malai in a clean, covered container in the refrigerator.

Continue collecting it until you have around two cups of malai.

Tip: Fresh, full-fat milk will generally give you richer malai and better homemade butter.

2. Churn the Malai

Take the chilled malai in a large bowl and begin churning it using a hand whisk, traditional mathani or even an electric whisk.

Add a little cold water while churning.

After some time, the butter will begin separating from the liquid. You’ll notice soft white lumps of butter coming together.

3. Separate the Butter

Once the butter has separated properly, gather it gently with your hands or a spoon.

Transfer the butter into another bowl and rinse it gently with cold water to remove excess buttermilk.

This gives you soft, clean and fresh homemade makhan.

4. Add Mishri

Now add roughly 2–3 tablespoons of mishri to the freshly prepared makhan.

You can adjust the quantity depending on how sweet you want the bhog to be.

Mix gently so that the butter retains its soft texture.

And that’s it, your fresh Makhan Mishri is ready for Laddu Gopal.

Can You Make Makhan Mishri Without a Traditional Churner?

Yes. If you don’t have a traditional mathani, you can easily use a hand whisk or electric hand mixer. The important thing is to use chilled malai and allow enough time for the butter to separate.

If you’re making Makhan Mishri specifically for Janmashtami, preparing the malai a few days beforehand can make the process easier.

Tips for Making Perfect Makhan Mishri

  • Use fresh, full-fat milk malai for richer butter.
  • Keep the collected malai refrigerated.
  • Use cold water while churning to help the butter separate.
  • Don’t add too much water at once.
  • Rinse the butter gently with cold water after separating it.

Janmashtami celebrations don’t always require elaborate preparations. Sometimes, the simplest offerings carry the most warmth.

How to Make a Delicious Guacamole

 All you really need to make a perfect guacamole is some ripe avocados and salt. After that, bit of lime or lemon juice - a splash of acidity to counter-balance the richness of the avocado. Then you can add some chopped chilies, onions, cilantro, and tomato, if you so wish. To make sure the avocado is ripe, gently push on the outside of the fruit. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may not be good. In this case, it's best to try some before using.


Recipe: Guacamole

Guacamole (Serves 2-4) 

Ingredients  

• 2 ripe avocados 

• 1/2 tsp salt 

• 1 tbsp  of fresh lime or lemon juice 

• 2 tbsp to 1/4 cup of minced red onion or thinly sliced green onion 

• 1-2 green chilies, stems, and seeds removed, minced 

• 2 tbsp cilantro/ coriander (leaves and tender stems), finely chopped 

• A dash of freshly grated black pepper

• 1/2 ripe tomato, seeds and pulp removed, chopped. 

Method 

1. Cut the avocado, remove flesh: Cut the avocados in half. Remove the seed and score the inside of the avocado using a blunt knife, and then scoop out the flesh with a spoon. Place in a bowl. 

2. Mash with a fork: Using a fork, roughly mash the avocado (don't overdo it as the guacamole should be a little chunky). 

3. Add salt, lime juice, and the rest: Sprinkle with salt and lime (or lemon) juice. The acid from the juice will help to delay the avocados from turning brown. Add the chopped onion, black pepper, chilies, and cilantro. Chili peppers vary in heat, so it's best to add the chili gradually until you reach your desired spiciness. 

 4. Cover with plastic and chill to store: Place some plastic wrap over the guacamole so that air cannot reach it (air will cause oxidation which will turn the guacamole brown). Refrigerate until ready to serve.
