For vegetarians, instead of having with eggs, you may substitute with besan, rice flour, whole wheat flour.
All you need is besan 4 tbsp
rice flour 2 tbsp
salt to taaste
green chilies finely chopped to taste
spinach finely chopped 1 cup
onion finely chopped 1 medium size or even spring onion with green can be added
carrots finely grated ( optional)
water to make batter.
The batter should be like dosa batter.
Heat an iron tawa/ girdle, once hot, smear little oil, pour the batter, cook on medium heat putting little oil all around, Once the bottom is brown, flip and cook till it is done. Serve hot with chutney of your choice or can be eaten plain too.
ps- add some finely chopped coriander leaves, you may add tomatoes, even very finely chopped potatoes if you wish a really filling pancake, to keep you working till lunch time !
