Often you may have some left-over dal, or what we South- Indians make as kuttu- which is made with dal and veges. Years ago, when my kids were small, I had left-over kuttu, it was quite a bit and I got tired of eating the left-overs alone, I'm sure all mothers out there will agree with me, as often, we end up as garbage cleaners, trying to finish the left-overs !
It was also holiday time and you know that the family is always hungry. What else but to make them a sumptuous brunch, so once gets some rest ( well, that is what I thought !, it was always more cooking when kids and hubby are at home). I often used to wish, that men should work all the days of the week in the office and kids too have 7 days school, so moms will get some rest.
Well, let me come to my recipe with left-over kuttu
I fried some onion, spiced it lightly with some green chilies, added the left over kuttu, cooked till it got thick, then smashed it all well.
1)I made some nice sandwiches with the left-over kuttu, adding some cheese in the sandwiches ! It all disappeared in no time and they all were wondering how yummy the sandwich was !
2) If you've some left-over dal, you can end up turning it into some cutlets ! unbelievable, right?
You fry 1 big onion finely chopped, add 2-3 big carrots finely grated, you can add some sweetcorn or peas, cook it all well, smashing it a bit, especially corn / peas. Then add the dal, in case it is little watery and about 1 cup, then roast 1/2 cup of rava/ semolina lightly, add seasonings of your choice, add the rava, cook till thick. Cool well, adding lime juice, finely chopped coriander leaves. Then add breadcrumbs about 1/2 cup or as needed so that you can shape cutlets as you desire. Shallow fry it. Or you don't have rava, you've some oats, roast and powder it, add that to dal, once thick, follow the same procedure.
3) Quick mixed vegetable rice with left overs !
Often we've little dal, little vege, kuttu, or sambar, what to do, as you're in no mood to eat left-overs. Well no worry. Make the family eat it all too and see them licking their fingers too !
Heat some oil, add little mustard seeds, fry some nuts- peanuts/ cashew nuts well, add onion finely chopped 1 big. fry well adding wee bit of salt
Add 2 big tomatoes finely chopped, fry well, adding some turmeric pdr, coriander pdr and jeera pdr.
add finely chopped capsicum 1/2-1 depending on how many of the left-over you've. fry well.
You can add any other vegetable like carrot, peas, potatoes and so on, it depends on what will go well with your left-overs, once veges are cooked well, add all the left-overs- dal/ kuttu, veges, cook adding some sambar bath pdr. or garam masala, lots of finely chopped coriander leaves, then add enough cooked rice to mix with it, ad some ghee last.
You'll see your family gorging on it, at times, nothing will be left for mothers I can assure you ! as together, it all tastes so good, also depends on the masalas you use.
Notes- you can add some left-over rasam, ot vathak kulambu, whatever you've, try your combo, it will come out yummy, make sure you use the correct masala pdr. to blend with it all.
