Ingredients
2 1/4 cups chopped spinach (palak)
1/2 cup fresh fenugreek (methi) leaves
1/2 cup finely chopped onions
1” piece ginger
3 green chillies , finely chopped
1/2 cup sliced low fat paneer/ cottage cheese
1/2 tsp dried mango powder (amchur)
3 tsp oil
Salt to taste
Method
Wash spinach and fenugreek properly by removing thick stems.Cook them in microwave, along with ginger and green chillies for 40 seconds, blend the cooked leaves in a blender. Now put the oil in a pan add onion, fry it for 5 mins. Add paneer , spinach, amchur powder, and salt and cook for 3 to 4 minutes and serve hot with rice/ roti/ bread toast.
