- Ingredients
- 2 pounds or 800 gm yellow summer squash, cut into 1-inch chunks
- 3/4 cup shredded reduced-fat sharp Cheddar cheese, divided
- 1/4 cup reduced-fat mayonnaise
- 1/2 cup liquid egg substitute
- 1/4 tsp salt or to taste
- 1/4 tsp black pepper pdr.
Method-

Preheat oven to 375 degrees F. Grease a big baking dish.

In a large saucepan, add squash with enough water to cover; bring to a
boil. Reduce heat to medium and cook 8 to 10 minutes, or just until
squash is tender. Drain well.

In a large bowl, combine squash, 1/2 cup cheese, mayonnaise, egg
substitute, salt, and pepper. Spoon into prepared baking dish. Sprinkle
remaining cheese on top.
- Bake for 30 minutes, or until golden and heated through in a pre-heated oven at 180 deg. C
