A gluten-free, dairy-free, and processed
sugars-free homemade Bounty. And what a bounty it truly is, with the
added crushed strawberries on top! This chewy delight will be most
welcome come summer.
Ingredients for bounties:
Coconut flakes - 1 1/2 cups
Coconut cream - 2/3 cup
Maple syrup - 1/4 cup
Coconut oil - 2 tbsp.
Vanilla Extract - 1 tsp.
Frozen strawberries - 4 tbsp. (crushed)
Dark chocolate - 1 1/2 bars
Method of preparing the bounties:
In a bowl, mix the coconut flakes, cream and maple syrup.
Add the
coconut oil, the vanilla and 3 1/2 tbsp crushed frozen strawberries.
Line a square baking dish. Knead the coconut dough to make 9 equally
sized fingers.
Freeze for 30 minutes.
Melt the chocolate.
Dip the coconut sausages in the chocolate and
chill in the fridge for 5 minutes.
Garnish with the rest of the frozen strawberries and some coconut
flakes and serve.
