Cashew-choco balls- NO cook/ or bake !Real quick



 I wanted to give to the kitchen staff, who slog for us 365 days of the year, on New Year morning, I give them some sweets made by me or chocolate packet. Today I decided to make the quick, no-cook/ bake balls.

 

Ingredients

sugar 1 cup

cashews 1/3 cup - more or less

powder both these in the mixer jar to a fine powder along with 2 tsp of cocoa pdr. 

put this powder in a big bowl

desiccated coconut 1 cup

milk pdr 1 cup 

I powdered both coconut and milk pdr along with another 2 tsp of cocoa pdr

added all the powders together, mix well

I'ld not make balls, I added 4-5 tbsp of ghee, mixing after each tbsp of ghee, till I'ld roll it. I made small balls, as it is easier to pop into your mouth. Normally when some ladoos are made big, some people try to break with hand, then small particles of the balls fall down. To prevent the mess, I started making  small balls.

Some balls to distribute among my friends here, especially to elders to get their blessings on the New Year day.

Ginger Snaps

  

 Ingredients

225 gm white butter softened

brown sugar 100 gm

sugar 200gm

molasses 40 gm

egg 1

vanilla  extract 1 tsp

maida 3 cups

salt 1 tsp

ginger pdr  4 tsp

cinnamon pdr 1 tsp

cardamom pdr 1/2 tsp

Demerara sugar for rolling 

 

Method

 Preheat the oven to 350°F/180°C. Line 2-3 baking sheets with parchment paper.

In a bowl take butter, brown sugar, granulated sugar, and molasses together and mix with a hand mixer until light and fluffy. Add the egg and vanilla and mix to combine.

Sift together the flour, baking soda, salt and spices in a small bowl. Add to the mixer and mix until just combined.

Using cookie scoop, scoop balls of dough, and place them onto a prepared baking sheet. Roll each ball of dough between your hands to form a ball, then roll in the demerara sugar before placing on the baking sheet.

Bake the cookies for 16-17 minutes or until puffy and set around the edges. Remove from the oven.  Cool on the pan for 5 minutes. Transfer to a wire rack and allow to cool completely. Repeat the baking process with the remaining cookie dough.

Shortbread Cookies

  

Ingredients

 2 cups butter softened

white sugar 1 cup

vanilla extract 2 tsp

all purpose flour 4 cups 

 

Method

Preheat the oven to 350°F (180°C).

Beat softened butter and sugar together in a large bowl with an electric mixer until light and fluffy.

Stir in vanilla; add flour and mix well until combined.

Fill the cookie press with dough and form cookies onto two ungreased cookie sheets, spacing them about 1 ½ inches apart. Bake until the edges of the cookies are just starting to turn golden brown, about 10 to 12 minutes.

 Remove the cookie sheets from the oven and set them on a wire cooling rack for a few minutes. Then transfer the shortbread cookies to the rack to cool completely.

Eggless Orange Bundt Cake

 Ingredients

Pre-heat oven at 180°C
Grease a bundt tin with butter and sprinkle some flour to coat the inside of the tin.
In a large bowl, cream together the butter and sugar, until turns light and fluffy. Add yogurt and beat it well. Add the extracts too and beat again.
In another bowl mix together flour, baking soda, baking powder, salt and orange zest, set it aside.
To the cream butter mixture, add the flour and orange juice alternating between each ingredient and beat after each addition.
Add chopped dry fruits and mix well.
Pour the batter into the baking tin and tap it on the counter to break air bubbles.
Bake it in the oven 35 minutes in 180 C  or until a toothpick inserted in the middle of the cake comes out clean.
Once done remove the cake tin and place it on a cooling rack.
Heat a pan in low medium flame, add 4 tablespoons sugar, once it caramelizes, add orange juice and boil it for 5 minutes.
Now, drizzle the cake with the prepared orange glaze and set aside for few minutes.
Cut into desired pieces and serve.

Spinach with garlic

 Ingredients

 

For Tadka

Blanch the cleaned spinach for about 1 minute, drain the excess water and transfer the boiled spinach to an ice bath.
Transfer it into a blending jar along with garlic, ginger and green chilies. Blend everything into a smooth paste.
In a kadhai melt the ghee and place it on medium heat. Add the blended spinach mixture add salt and cook for 5 minutes or until it forms a smooth uniform mixture.
Turn off the flame and transfer the palak into a serving bowl.
Add ghee into the tadka pan, add some cumin seeds and let it crackle on low flame. Now add the finely chopped pieces of garlic and fry them in the ghee till they are golden, finally add the whole red chilies and turn off the flame.
Add this prepared tempering over the palak gravy and do not stir it as it is visually attractive. Serve with ghee parathas.

Chickpeas Shakshuka

 Ingredients

 

Preparations

Take a medium-sized flat skillet, and put it on medium flame. Add some olive oil and once it is heated, add the chopped garlic, and then the onions.
Cook the onions until they are golden brown. Now add the chopped tomatoes and add the seasonings, like salt, chili powder and cumin powder.
Cover for a minute, until the tomatoes are soft and mushy. Now add the boiled chickpeas and mix well.
Once everything is well cooked, make small impressions on the tomato base, and crack the eggs one by one inside the created impressions. Do not stir or mix the eggs.
Cover with a lid and let it cook for a minute or two. The eggs must be cooked in a way where the white is cooked, but the yolk is slightly runny.
Now sprinkle some pepper powder over it. Garnish with fresh coriander and enjoy with pita bread or naan.

Chocolate Almond Butter

Ingredients

1 tbsp

Dry roast all the nuts and blend until they start to leave oils and turn to paste form.
Then, add remaining ingredients and blend until well combined.
Store in sterilized container and use as required.

Quinoa Pumpkin Soup

  

Ingredients

 

Preparations

Take pumpkin, peel and de-seed it. Cut it into cubes.
Take the onion, peel and cut it into small pieces.
Take half a cup of quinoa, add one cup of water and boil it on medium flame for 20 minutes.
Boil the pumpkin and onion with adequate water for 20 to 30 minutes (the pumpkin should get cooked).
Once it cools down a bit, mix the boiled pumpkin and onion in a blender with salt and pepper. Add water if necessary.
Take it from the blender and heat it again.
Pour the soup in the bowl and top it with the required quantity of quinoa. Mix well.
Top it with feta cheese and coriander leaves.

Raw Papaya and Carrot Pickle

 Ingredients

Prepare the vegetables by slicing them to 1-inch pieces.
Marinate the vegetables with salt and 1 tsp of turmeric and let them sun dry for 3-4 hours.
Slit the green chilies and garlic whole in the middle.
Take the vinegar in a cup and toss in the garlic and green chili. Let it soak for a few minutes.
Ground the mustard seeds and mix with turmeric powder.
In a large bowl or plate, mix all the ingredients well. Preferably with hand so they spread equally.
Then move them to the jar and store it. 
 
You can have it with roti, bread toast.

Lemon Cinnamon & Ginger Tea

  

Ingredients

In a pan add 1 cup of water and bring it to a boil, add tea leaves and sliced ginger.
Stir well, bring it to a boil on low heat for 1 minute.
Once done, the decoction will change color. Strain it into the cup.
Now add honey, lemon juice and cinnamon sticks. This is best consumed, at night before going to bed and in the morning after waking up.

Turmeric Latte

Ingredients

 

Preparations

In a saucepan, place the milk on low heat, add the sugar (if adding honey, do so just before serving) turmeric powder, and ginger and heat for a minute.
Now add a pinch of pepper and mix well.
Remove from heat, using a strainer, strain the latte.
Transfer to the serving mug and add a pinch of cinnamon to garnish. Enjoy hot.

Gond Pak

Ingredients

Heat clarified butter in a wok/ kadai
Add gond fry and strain it.
Add cashew nuts, almonds, and whole black pepper fry and keep aside.
Again heat clarified butter in a pan.
Add whole wheat flour and stir continuously and roast till it turns brown and give out the fragrance.
Add mawa and mix well.
In another pan, add sugar and water till sugar dissolves.
Keep it on medium flame for 8-10 minutes.
Add roasted whole wheat flour, fried gond, whole black pepper, and cardamom powder and mix well.
Garnish with roasted almonds, cashew nuts, and raisins.

Til Ladoo ( Sesame balls)

 Ingredients 

Roast the sesame seeds together in a non stick pan on medium flame. 
 
Take another non stick pan, add 1 tbsp desi ghee and then in ghee add mashed jaggery. Cook until it melts. 
 
Now in melted jaggery add roasted sesame seeds and mix well. Make small balls(ladoos)carefully as it is hot.

Spinach Cheese Balls

  

Ingredients

 

Preparations

First blanch the 100g spinach, then squeeze out the water, mix with 1/2 spoon garlic and 1 spoon cornflour. Add a little salt to taste and breadcrumbs. Mix and keep aside. 
 
In a bowl, grate cheese cubes or mash them. Add little Italian spice mix or oregano with one small onion and mix. Now dab some oil on your palm and make small dough with the spinach mix. Add cheese mix in the center and a make a ball.
 
You can make 5-6 small balls with this mix and then  deep fry them.
Let it cool and enjoy the cheese melting in your mouth as you take a bite.
