Mango Upside Down Cake
Ingredients
- 2 cups sliced ripe mangos
- 2 tablespoons lemon juice
- 1 tablespoon butter
- 1/3 cup brown sugar
- 1/4 cup butter
- 3/4 cup sugar
- 1 egg
- 1/2 cup milk
- 1 1/4 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Method
- Preheat oven to 375 degrees F.
- Pour lemon juice over mangos and let stand 15 minutes.
- Melt 1 tablespoon of butter in 8-inch cake pan or casserole. (Do not use iron skillet as mangos will darken.)
- Add brown sugar and cover with mango slices.
- To prepare cake batter, cream butter; add sugar and cream; add beaten egg.
- Sift dry ingredients and add alternately with milk. Pour over mangoes and bake 50 to 60 minutes. When cake is done, turn upside down and serve while warm.
