Creamy Chipotle Sauce

Creamy chipotle sauce can be made ahead and is great for meal prep. The sauce is thinner after blending and thickens in the refrigerator as it cools.  Chipotle is a smoke-dried jalapeƱo chili pepper that's commonly used in Mexican and Mexican-inspired cooking. It has a deep, smoky flavor and is quite hot.  
 
Uses=Dip -
Use it as a dip for fries, veggies, or tortilla chips
  • Spread
    Spread it on sandwiches, burgers, or wraps
  • Topping
    Drizzle it on tacos, burritos, or grilled meats
  • Salad
    Drizzle it on rice or quinoa bowls, salads, or roasted vegetable salads.
     
     
    Ingredients  
     
    1 chipotle chile in adobo sauce plus 1 tsp. sauce (canned) 
     
    ½ cup mayonnaise
     
    ⅓ cup plain Greek yogurt 
     
    ¼ cup chopped cilantro 
     
    ¼ tsp. ground cumin 
     
    ¼ tsp. dried dill 
     
    Kosher salt, to taste 
     
    Directions  
    1. Place all the ingredients in a blender or a food processor and puree until smooth. This should take about two to three minutes. The mixture should be nice and creamy.
     
    2. Pour the sauce into a jar or a small bowl. The sauce will keep in the fridge for up to four weeks.
