When my children were small, I used to make small rotis, spread coconut chutney and at times add some leftover vegetable to cook them crisp, so they can eat it hot during lunch break when they're in primary school.
INGREDIENTS
to make dough
whole wheat flour as required
salt little
oil 2 tsp approximately
ghee as needed to cook
FILLING
coconut chutney as required
grated carrot as needed
grated cabbage little OR
left-over cooked vegetables
cheese grated / paneer optional
METHOD
knead soft dough using flour, salt, oil and water. cover and keep aside for 10 minutes
knead dough again, make small equal size lemon balls
roll out each into small thin chappati / roti
spread chutney, spread veges, sprinkle cheese/ paneer
cover with another roti, press the edges well, you can use a fork to do so
heat a tawa, once hot, place the prepared stuffed parantha on it, keep flame on medium
once the lower side is slightly cooked, turn over, spread some ghee on the cooked side
turn it once cooked spread some ghee, cook till crisp
remove, cut into pieces and serve hot, it can be eaten plain.
OPTION 2 variation in filling
Make dough like you knead for any roti, rest for 10 minutes
FILLING
Mint chutney as needed OR any other chutney you've
onion finely chopped
carrot finely grated
cabbage finely grated/ chopped
paneer grated
finely chopped green chilies to taste or chili pdr to taste
salt to taste
left-over veges you have otherwise
cheese slices optional
Like mentioned above roll out small equal sized rotis
spread chutney on one, spread some onion, carrot, cabbage, sprinkle salt, chili pdr or green chilies
chaat masala of desired, paneer, if desired keep a cheese slice on top.
Cook on medium heat on a hot tawa
once bottom is slightly cooked, flip over, cook till lightly brown, spread ghee on both sides, cook till well cooked and crisp
serve hot by cutting into small pieces or quarter, so easier to bite
since it has already chutney and other veges, you may not need any extra side dish
eat it hot and enjoy the chutney parantha.
