INGREDIENTS
basmati rice 1 cup
cooked soybean chunks 1 cup
onion finely chopped 1
ginger-garlic paste 1 tsp
mint leaves 2 tbsp
chopped coriander leaves 1/2 cup
red chilli pdr. 2 tsp or to taste
coriander pdr. 2 tsp
biryani masala pdr. 1 tsp
curd 2 tbsp
cinnamon stick 1/2 " piece
cloves 4
cardamom 2
bay leaf 1
ghee 2 tbsp
salt to taste
turmeric pdr. 1 tsp
METHOD
wash & soak the rice in 2 cups of water for 30 minutes
in a bowl, mixed cooked soy chunks with 1/2 tsp of turmeric, chilli pdr. & salt, cover & keep aside.
heat ghee, put whole spices, fry well till aroma comes, then add ginger-garlic paste, onion, fry till onion is light pink.
add mint leaves, cover for 1 minute
add curd, all dry masala powders, cook for 2-3 minutes
add rice, along with the water in which it was soaked, coriander leaves, bring to a quick boil, then reduce heat, add soy chunks, cover the dish till rice is almost tender & dry
remove, garnish with nuts & raisins & serve with any raita of your choice.
