STUFFED MUSHROOMS

INGREDIENTS
for stuffing
oil  1 tsp
garlic chopped 1 tsp
ginger finely chopped  1 tsp
green chillies finely chopped  2 tsp or to taste
capsicum chopped  2 tbsp
tomatoes chopped  2 tbsp
spring onion chopped  2 tbsp
salt to taste
vinegar  1/2 tsp
soya sauce  1/2 tsp

mushrooms  8-10 remove the stalk
oil 1 tsp for shallow frying

METHOD

in a pan, heat oil, add garlic, ginger fry for 1 minute, add chillies, fry for another minute
add capsicum, tomatoes, spring onion, salt, fry well
once the veges are cooked, add vinegar, soya sauce, mix well , remove, cool
stuff the mushrooms well with the stuffing, shallow fry in a pan, adding 1 tsp oil, well on both sides.

ps-  mushrooms are rich in fibre and proteins, low in carbs, having calcium, potassium, phosphorous, zinc and good amount of Vitamin B complex.they're considered as vegetable. It can be made as soups, with rice, vegetables, in salads, etc.
