INGREDIENTS
pumpkin grated/ cut into pieces 1 cup
sugar to taste
milk 2-3 glasses, depending on how thick you prefer, either you can serve as rabri, or kheer !
vanilla essence 1 tsp or cardamom pdr. 1 tsp
METHOD
boil milk in a heavy vessel, puree the pumpkin in a mixie along with vanilla pod if you've
add to the boiling milk, keep stirring, once well cooked on low flame for about 5-7 minutes, add sugar to taste, boil till sugar melts, then boil till your desired consistency is achieved.
serve hot/ cold, garnish with saffron soaked/ finely chopped nuts and cardamom pdr.
pumpkin is healthy, as it has lots of fibre, rich in Vitamin A, good for the eyes.
