SPROUT KACHORIS

INGREDIENTS
for stuffing
spring onion 1/4 cup
cauliflower  1/4 cup chopped fine
carrot 1/4 cup finely chopped/ grated
vinegar  1/2 tsp
soya sauce  1/2 tsp
chilli pdr.  1 tsp
salt to taste
mix all well, keep for 5 minutes
heat oil  1 tsp, add 1tsp chilli-ginger-garlic paste fry, add the marinated veges, stir fry for 2-3 minutes, add 1 tbsp Shezwan chutney, 1/2 cup
 parboiled sprouts, 1 boiled, peeled and mashed potato, mix well, cool the mixture

for covering

maida  1 cup
suji /rava   1 tbsp
salt little
mix all well, add water to make a stiff dough
oil for frying
roll out the dough into small puris, put enough stuffing in each, bring the sides together to cover them well, slightly toll them, then deep fry in hot oil till light brown in colour, drain well, serve with green and sweet chutney.
