ORANGE CHAKLI

INGREDIENTS

orange juice  2 cups
castor sugar  2 tbsp
butter 30 gm
orange zest  1 tsp
cinnamon 1"
star anise  1
maida/ all purpose flour  2 cups
oil for frying
castor sugar mixed with cardamom pdr. for coating

METHOD

in a heavy pan, boil orange juice with cinnamon and star anise, add sugar, once it comes to a boil, quickly add the flour, mix well, seeing no lumps, remove, keep aside to cool
remove star anise and cinnamon from the dough
heat oil, put dough in chakli mould, either you can directly chaklis in the oil, or make small chaklis in a plastic sheet, and slowly dip into oil, fry in medium flame till brown, once you remove, they may not be crispy, but after draining, roll the chaklis in castor sugar to coat it well.
cool, serve , if it is left over, store in an air-tight container.
