LASAGNA

INGREDIENTS

for sauce
oil  2 tbsp
garlic chopped  1 tsp
onion finely chopped  2 tbsp
capsicum chopped  2 tbsp
tomato puree  1 cup
oregano  1 tsp
parsley  1 tsp/ coriander leaves
salt to taste
sugar  1 tsp
tomato ketchup  2 tbsp

spinach and cottage cheese cooked mixture with salt and chilli/ pepper pdr.  1- 1 /2 cups,
lasagna strips boiled, as many as needed to place in a oven proof dish in 3 layers
processed cheese grated as needed
Parmesan cheese grated as needed
Mozzarella cheese grated as needed
brinjal cut into round slices, shallow fried, adding salt and chilli/ pepper pdr. about 10-12

METHOD

for the sauce
heat oil, add garlic, fry lightly, add onion, fry till light brown, add capsicum, fry for 1 minute
add tomato puree, oregano crushed, let it simmer for 10 minutes add mixed herbs, salt, sugar, tomato ketchup, let it boil for another 5 minutes on low flame
grease an oven proof glass dish, as then you can see the layers, if not any dish is fine
spread one layer of sauce, lasagna sheets, which have been boiled and drained well, spread a layer of fried brinjal slices, covering the strips, spread sauce over them, spread the 3 different types of cheese, then a layer of lasagna sheets, spread spinach/ paneer mixture well, covering it
spread sauce over the mixture, add the 3 cheese, repeat with lasagna sheets, sauce, cheese
bake in a pre-heated oven at 180 deg. C or 350 deg. F for 15 minutes
serve hot for lunch or dinner as it makes a complete meal.
ps- you can sprinkle chilli flakes between layers, as chilli pdr. wasn't added, it depends on your taste.
