INGREDIENTS
for stuffing
coconut grated 1 tbsp
cashew nuts finely chopped 1 tbsp
raisins chopped 1 tsp
finely chopped coriander leaves 2 tsp
salt little
sugar 1 tsp
ingredients for vada
bread slices
green chillies either finely chopped or paste 1/2 tsp
ginger paste 1/2 tsp
salt little
buttermilk
oil for frying
curd as required
sweet chutney as needed
coriander-green chilli chutney as needed
chaat masala to sprinkle on top
finely chopped coriander leaves 1 tbsp
fine sev little
soak bread in little water, squeeze out completely or you can use ground urad dal for vadas *
add rice flour little depending on the quantity of bread used to bind, so that it is like vada batter
deep fry in hot oil, by making small vadas, putting stuffing inside, till golden colour
drain well, soak in buttermilk for 2-3 minutes, squeeze out completely
keep on a big plate, pour curd on top, add salt, mix well, spread chutneys, coriander leaves, sev and chaat masala on top
*- in case vada batter is slightly thin, add some fine semolina( as then you'll get crisp vadas) always add salt after grinding
ps- you can avoid stuffing if you find it cumbersome.
