INGREDIENTS
WHOLE WHEAT FLOUR 2 cups or as needed, pinch of salt, water, make soft dough
for stuffing
onion finely chopped 2 tbsp
capsicum finely chopped 2 tbsp
coriander leaves finely chopped 2 tbsp
corn microwaved/ boiled and mashed 2 tbsp
tomato finely chopped 1 tbsp
paneer/ cottage cheese grated or mashed 50 gm/ 5 tbsp
spinach/ palak leaves 8-10 washed and chopped
potato boiled, peeled and mashed 2 tbsp
salt to taste
garam masala pdr. 1/2 tsp
chilli pdr. 1/2 tsp or to taste
oil 1 tbsp + for cooking
METHOD
in a pan, heat 1 tbsp oil, fry onion till light pink, add capsicum, corn, fry again, add tomato, spinach leaves, fry till tomatoes are mashed, add mashed potato, paneer, seasoning, chopped coriander leaves, mix well, remove and cool.
make roti dough using flour, salt, water
heat a tava, keep it small, take a big lemon size ball of the dough, roll it slightly, put enough stuffing, cover from all sides well, roll it as thin as possible, taking care not to press hard, as the filling shouldn't come out. roll all paranthas in the same way.
cook on hot tava, using oil/ ghee on both sides till brown spots appear.
serve hot with pickle, spiced curd, this can be wrapped and taken for lunch to school/ office.
