ingredients
all purpose flour/ maida 2 cups
salt to taste
carom seeds/ ajwain 1/2 tsp
dried fenugreek leaves
light table spread 5 tbsp
containing healthy vegetarian omega 3
oil for frying
Method
place the flour in a bowl & add salt, carom seeds & dried fenugreek
leaves, mix well
add 5 tbsp of table spread, mix well
add sufficient cold water & knead into hard dough, cover it for 15
minutes
divide the dough into 24 balls of equal size, flatten them, roll each into
small puri, prick them all over with a fork, so that they don't fluff up while
frying, fold into half, then fold again
to make a triangle.
stick a clove at one corner, making it appear like a beeda
heat sufficient oil in a kadai, slide the mathris, few at a time, fry on
medium heat till golden & crisp
it can be made in other shapes also, like round, semi circle
drain well, cool completely & store.
