INGREDIENTS
corn kernels roughly 3 cups
corn kernels roughly 3 cups
ginger 1" chopped
garlic 5 cloves ( optional)
garam masala pdr. 1/2 tsp
green chillies 4
lemon 1
chilli pdr. 1/2 tsp
coriander leaves 2 tbsp
ghee 1 tbsp
oil for cooking & frying
salt to taste
maida/ all purpose flour 3 cups
METHOD
add 1 tbsp ghee & little salt to maida and knead to a stiff dough with enough water, cover & keep aside for 20 minutes.
grind garlic, ginger to a fine paste
grind corn to a fine paste with green chillies
heat 2 tsp oil, fry ginger-garlic paste till it is light brown
add corn paste, rest of the spices, salt, 1/2 of the coriander leaves, cook for 2 minutes, stirring well, remove, add rest of the coriander leaves, lemon juice, mix and keep aside to cool
take small amount of the dough, roll into small puris, stuff with corn mixture, bring the dough together from all sides, to from a round ball, slightly roll, taking care that the filling doesn't come out. repeat with rest of the dough, deep fry in hot oil till light brown, drain well
serve hot with green & sweet chutneys.
