Carrot Lemonade

While lemonade is ideal for summer, we feel that you can enjoy this one all year round. It provides the obvious vitamin C benefit of the citrus but with a slightly less tangy flavor thanks to the carrot. You can also swap the sugar for maple syrup or honey for a better nutritional profile.

Carrot Lemonade
 
Ingredients for drink: 
 
Carrots - 2 medium (grated) 
 
Lemon - 5 (juiced) 
 
Orange - 1 (juiced) 
 
Brown sugar - 1/2 cup 
 
Sparkling water - as needed 
 
Method of preparing the drink: 
 
Stir together all ingredients apart from the sparkling water. 
 
Let sit in the fridge for at least 1 hour, stirring occasionally. 
 
Strain through a sieve, pour halfway into glasses, top with sparkling water and add some ice if you'd like. 
 
Chef's Tip: Pour this into popsicle molds for a frozen treat- you can also skip the straining to enjoy the pulp!
