Amla is the richest source of Vitamin C. Just one amla a day gives us enough vitamin C needed for the day. Being water soluble vitamin, we need to take this vitamin daily. Normally one makes pickle, or murraba, i.e., any fruit cooked in thick sugar syrup, or raita- i.e., it is ground along with green chili and salt, and mixed with curd. But for a change wanted to make a very healthy halwa, especially my husband is a big fan of amla, when I\m cutting for the pickle, he can eat 2 whole amla.
Ingredients
amla / nellikai as much as you need
gur 3 times the ground amla paste
to make it healthier I added oats powdered 2 tbsp ( optional)
I also added ragi and multigrain powder 2 tbsp
ginger chopped 1 tbsp
Method
wash and cut amla, taking out the seed, or you may wash and pressure cook it for 3 whistles, cool and grind along with ginger to a very fine paste.
In a heavy pan, add the ground paste and gur powdered about 3 times the quantity of amla paste, keep mixing well and cook on low flame stirring often for the gur to melt.
keep cooking till thick, adding oats and ragi powders if you're adding, once thick, remove.
as it cools, it give get thicker, as one it will last long at least a week easily outside if handled carefully, as there is no water added.
It is healthy, as it has got vitamin C and fiber from amla, iron , magnesium from gur, if using ragi, then you get calcium and iron and more vitamins and minerals depending on your ingredients.
