Ingredients
• ½ pound bacon, diced (reserve some for garnish)
• 8 oz. cream cheese softened
• 1 cup shredded mozzarella cheese
• ½ teaspoon garlic powder
• ¼ teaspoon cayenne powder
• 1 jalapeno, minced
• ¼ red onion, cut into small pieces
• 20 oz. frozen corn, thawed and divided
• ¼ cup fresh chopped basil (reserve some for garnish)
Directions
1. Preheat the oven to 400F.
2. In an 8-inch oven-safe skillet, cook the diced bacon over a medium
heat until brown and crispy. Remove the bacon from the grease and drain
on a paper towel. Keep the skillet for later use.
3. In a medium bowl, mix the cream cheese, mozzarella, garlic powder,
and cayenne powder. Add the jalapeno and red onion. Add roughly ¾ of the
corn, cooked bacon, and chopped basil, reserving the rest of each for
the garnish. Stir until fully mixed, then spread into the skillet.
4. Bake for about 30 minutes, or until the cheese is melted and the dip
is bubbling.
5. Garnish the dip with the reserved corn, basil, and bacon.
