Ingredients
• 1 cup granulated sugar
• ½ cup corn syrup, honey, or golden syrup
• ¼ cup water
• ¾ cup heavy cream
• ½ teaspoon sea salt
• ½ teaspoon vanilla
• 4 tablespoons butter, browned
• Lollipop molds
• Lollipop sticks
• Candy thermometer
Instructions
1. Stick the lollipop sticks into the molds and set aside for the time
being.
2. In a small saucepan, melt butter and brown, until fragrant and
golden. Set aside.
3. In a separate pan, heat cream and ½ teaspoon of salt, and heat to a
gentle simmer. Stir in vanilla. Turn off the heat and set aside.
4. In a 4qt saucepan fitted with a candy thermometer, heat sugar, corn
syrup (or golden syrup or honey), and water, taking care to stir, only
to moisten. Once the mixture has melted, try not to stir, and heat to
300F.
5. Add the hot cream mixture to hot butter mixture, and stir until
smooth. Return to the heat and cook over a medium heat until it reaches
260F.
6. Pour into mold and let cool for 30 minutes.
