Champagne Lollipops
Ingredients
• ¼ cup champagne
• 2 tablespoons cold water
• ¾ cup sugar
• 3 tablespoons corn syrup
• Pinch of salt
• Cooking spray
• Lollipop mold
• Lollipop sticks
• Candy thermometer
• Food Dye (optional)
• Edible confetti (optional)
Instructions
1. Mix the champagne, water, sugar, corn syrup, and salt in a saucepan.
2. Bring to the boil over a medium heat, and stir occasionally until all
the sugar has dissolved. Clip a candy thermometer onto the side of the
saucepan. Without stirring, allow the mixture to boil until it reaches
300F.
3. Remove the mixture from the heat and quickly drop into the lollipop
mold sprayed with cooking spray. Using a spoon here helps prevent a lot
of mess.
4. Place a lollipop stick in the center of each mold, and twist it
around so that it has been fully covered in syrup.
5. If you want to, you can sprinkle some edible confetti onto the pops,
and add some food dye for different colors.
6. Allow the pops to cool completely before removing from the mold.
Store in an airtight container until you’re ready to enjoy them.
